Ingredients:
2 slices of bread (brown or white)
1 egg
½ a small onion roughly chopped
1 green chilli chopped
2 tbs fresh cilantro chopped
1 tbs vegetable oil/olive oil
salt to taste
pepper
cheddar/swiss cheese slices
Instructions
1. Whisk together in a bowl chopped onions, green chilli, cilantro, salt, pepper and egg.
2. Heat a cast iron skillet or a non-stick pan. When hot enough add the oil and pour in the egg mixture.
3. Top the omelette with the bread slices and sprinkle pepper over them.
4. Wait until you see the sides slightly browning, or you can just lift up the omelette to check. Do not over brown.
5. Turn over the omelette. Place the 2 cheese slices over it. Then close the sandwich by turning over one slice over the other as shown in the video.
6. Sprinkle more black pepper over the sandwich. Cut it into 2 triangles and enjoy it hot with some ketchup or mint chutney.

To make this sandwich, you will require eight slices of multigrain bread and cheddar cheese.
Butter two slices, place sliced cheddar cheese on two different slices, and place the butter bread on top of it.
Do the same with the remaining four slices of bread, and heat the sandwich in a toaster.
Remove it when the cheese has melted and the toast is a medium dark brown.
